While I have also used dry koji, I really enjoy the convenience of pre-prepared koji. I use it a lot in preparing meats/ proteins for cooking, and sometimes for one-night pickles. Its resealable screw cap closure is convenient and easy to use during meal preparation. Its a large size, which I appreciate. Sometimes I just don't feel like doing the fermentation myself, so this is a great luxury if you don't feel like preparing dry koji, or if you have not used koji before. Also in winter months it's harder to get a good fermentation, so pre-prepared koji is great for cooler conditions. For meats it imparts sweetness and tenderness. Highly recommend!
